Honey-Garlic Roasted Vegetables
Simple, nourishing, and perfect as a side dish.
Ingredients
- 2 medium size potatoes, chopped
- 2 cups carrots, sliced
2 cups broccoli florets
1 red bell pepper, chopped
3 tbsp olive oil
2 tbsp honey
3 garlic cloves, minced
Salt & pepper to taste
Directions
- Preheat oven to 400°F (200°C).
Mix olive oil, honey, and garlic in a small bowl.
Toss vegetables with the mixture until well coated.
Spread evenly on a baking sheet.
Roast for 20–25 minutes, stirring once halfway through, until tender and caramelized.
